Surmai is one of the most popular sea fish varieties in the country. The fish is known for being an almost smell-less fish, the Surmai Fillet is boneless and great for marinated dishes or just plain butter garlic preparations. The fish has an excellent taste and very good meat quality.
Because of the delicate flavour of the meat - it's a good choice for people who are trying sea food for the first time.
After filleting the fish had become too fragile to handle. Next time I will buy the piece with central bone, not the filet. Otherwise all OK
